Bigilla - Maltese broadbean dip/paste
- 250 grams broad bean, dried
- 750 grams water, For overnight soak
- 1000 grams water, For cooking
- 2 clove garlic
- 2 pods chilli, fresh
- 4 tbsp olive oil
- 5 sprigs parsley
- 1 pinch salt
- 1 pinch pepper, ground
- 4-8 tbsp water, Reserved liquid from boiling broadbeans

- Put dried broadbeans in Thermoserver or bowl and add water. Soak overnight.
- Next day, drain the beans from the water and rinse.
- Put the broadbeans in the mixing bowl "Closed lid" top with 1000grms water.
- Put the lid on without the measuring cup, and put the simmering basket in its place. Set the 45 mins/varoma temp/speed "Counter-clockwise operation" "Gentle stir setting" .
- After 45mins, check the broadbeans, they should mush between your fingers.
Put your simmering basket inside your thermoserver or bowl to strain the water. Keep this liquid. - Give the mixing bowl "Closed lid" a quick rinse under water, and put the broadbeads, garlic, chilli, parsley, pepper, salt, oil, 4 tablespoons of reserved liquid/water. Put measuring cup on your lid and set 10sec/- temp/speed 8.5
- Scrap the mixing bowl"Closed lid" with your spatula, test the mix. If it looks dry, add additional 1-6 tablespoons reserved liquid and mix for 10sec/- temp/speed 8.5
- Serve topping with extra parsley, chilli and olive oil.
Enjoy cold or warm with crackers.
Tip
If you like it to be not as thick add a little more olive oil and the reserved water till you achieve your preferred consistancy.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
