Ingredients
Pesto sauce
- 100 g Parmesan cheese, cut into 1-2 cm cubes
- 6 garlic cloves, peeled
- 300 g pinenuts, toasted
- 30 g Cashews, toasted
- 10 sprig basil, leaves only
- 40 g Spinach Leaves
- 200-220 g olive oil, to taste
- 50 g Butter, cut into cubes
- 600 g whipping cream
- 100 g Coppa, roughly cut into 3 cm pieces
Steamed Vegetables
- 100 g asparagus, cut into 4 cm pieces with wooden ends removed
- 150 g broccolini, cut into 4 cm pieces with wooden ends removed
- 50 g Spinach Leaves

1. Place vegetables into Varoma and set aside.
2. Add Parmesan and garlic cloves to mixing bowl and blend 5 sec/speed 9. Scrape down sides of bowl with spatula.
3. Add basil, spinach leaves, pinenuts and cashews into mixing bowl and blend 15 sec/speed 9. Use the spatula to help combine. Scrape down sides of bowl with spatula.
4. Add oil in gradually while set at speed 4. This will take approx. 15-20 seconds until the oil is well combined. Remove and reserve half the pesto for later use.
5. Add butter and cook 3 min/80C/speed 1.
6. Add whipping cream to bowl, gently loosen the pesto off the bottom off the bowl with the spatula. Place Varoma into position and cook 10 mins/100C/speed 3.
7. Check vegetables to ensure they are cooked to your preference. If they are cooked perfectly for you, set the vegetables aside.
If you want the vegetables softer, place the Varoma back into position after the next step.
7. Add the coppa to the bowl and cook 5 min/100C/speed 3.
8. Once complete, add the sauce and steamed vegetables to ThermoServer and stir to combine.
Pesto sauce
Tip
Serve sauce with your preferred cooked pasta (i.e. gnocchi, rigatoni or spaghetti), topped with shaved Parmesan and chlli flakes. Pasta used in picture is spaghetti.
For a gluten free option, serve with cooked gluten free pasta, gnocchi or rice.
As there is a lot of cheese in pesto, please ensure you do follow step 6 so it doesn't burn the bowl.
This can be easily vegetarian by omitting the coppa and adding a teaspoon of vegetable stock paste with the whipping cream in step 6.
This recipe is also amazing wth peas. Add peas to Varoma tray in step 7.
You can halve the pesto recipe but there are so many uses for pesto that I love making it in bulk and saving some for later.
The other thing that I love about this sauce is that you can add your preferred cured meat like prosciutto, pancetta or salami. I think coppa is so underrated and it's a great milder flavour alternative.
