Ingredients

Grant's Green Sauce

  • 5 --- shallots, tidied and peeled
  • 100 g parsley, curly leaf, fresh
  • 100 g parsley, italian
  • 100 g coriander
  • 15 cm ginger, stem
  • 3 --- Green Chillies, 2 seeded, one seeds in
  • 3 heaped tablespoons Avocado Oil
  • 4 heaped tablespoons lime juice
  • 2 heaped tablespoons lemon juice
  • 240 g water, 1g = 1ml

Recipe's preparation

    Making The Sauce.
  1. You will need one large bowl for the first few steps, and 6 x 120ml jars if you want to set the sauce aside for later.


    Tidy up shallots by cutting off ends and removing brown outer skin

    Break up all parleys and coriander and place in larger bowl



    Scrape down bowl



    Place shallots in bowl and select speed 5 for 30 seconds

    Add all parsley and coriander and chop for a further 40 seconds on speed 5



    remove all contents from bowl, back into large bowl - set aside



    Scrape down bowl and lid



    Place peeled garlic cloves into bowl

    Tidy up ginger and cut into 3 cm pieces, place in bowl with garlic

    Add 2 seeded and one unseeded green chillies



    Speed 5 for 15 seconds



    Scrape down bowl and lid



    Add set aside greens back into bowl and build up to speed 8

    after 30-40 seconds, add through lid the 3 tblspns of avocado oil and water



    Set to speed 10 until a paste with slightly watery consistency [should stick to spoon, with a little coming off]



    NB: you will need to scrape down lid and add back into mix at the end and set to speed 10 for a further 15 seconds to finish.



    Makes 6 x 120ml jars of paste.



    Serve over super crispy baked potatoes.
