Pre-weigh oil into a seperate jug
Place egg yolks, mustard and salt into bowl.
Insert Butterfly Whisk
Turn onto speed 4.
Once combined slowly add oil onto lid with measuring cup in place and let it drip through the MC hole.
This should take around 6 minutes in total, you want to add it really slowly.
Add Apple Cider Vinegar and combine at speed 4 for another 10 seconds.
Enjoy.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Turned out perfect! Maybe I'd use a tiny bit less mustard but I did heap the spoon I bit showed up hubby who tried twice to make it without a thermi and then reluctant admit my thermi one was great hahahaha
Wow! This was my first time making thermy mayo and it worked... it emulsified beautifully!
That said it is very rich and I ended up adding a small splash of lemon juice just to give it a bit of acidity..... I still think it could do with a bit more, or another slurp of vingegar but for now, I'm just happy that this worked!

This was fab! My first time making mayo, I used a mild tasting olive oil. Turned out wonderful and suits our families LCHF lifestyle
