Ingredients
Rough Puff Pastry
- 1 portion rough puff pastry
Chicken Filling
- 3 fillets chicken breast, Cut into thirds
- 1500 grams water
- 1 Zucchini, large, Roughly chopped
- 2 cloves garlic
- 1 bunch mint, Fresh
- 500 grams ricotta
- 100 grams Tasty cheese, Cubed
- 100 grams mozzarella, Cubed
- 1 egg, Optional
- 1 heaped tablespoon Pesto, Thermo made - basic cookbook (optional)
- 1 teaspoon Salt and pepper, Freshly cracked

Make 1 x puff pastry first
Step 1. Add tasty cheese and mozzarella to bowl and grate for 4 seconds on speed 7 - empty into seperate bowl and place aside - rinse mixing bowl
Step 2. Add Hot water and 2 cloves of zucchini to bowl, place chicken into bowl and cook for 12-15 minutes, 98 degrees, "Counter-clockwise operation" , speed 1.
Step 3. Check chicken is cooked right through, place basket over sink and drain chicken, leave to drain for a couple of minutes. No need to rinse bowl.
Step 4. Add zuchinni, mint and garlic from the chicken and chop 5 seconds speed 5.
Step 5. Add chicken, 6 seconds, "Counter-clockwise operation" , speed 5 - check and stir through with spatula.
Step 6. Add ricotta and grated cheeses, egg, pesto and salt and pepper and stir through "Counter-clockwise operation" speed 3, check and use spatula to completely mix though.
Step 1. Roll out large rectangle of pastry, cut into 3 equal lengths. About 6cm in width and 30cm in length
Step 2. Place filling along one edge, leaving enough room to seal.
Step 3. Roll up and place on baking tray.
Step 4. Bake about 25 mins 180 degrees.

Baby spinach can also be added to the filling.
Frozen puff pastry could also be used to make it quicker.
Herbs can be substituted to taste, such as Rosemary,basil etc.
Sundried tomatoes could be added at zucchini step to add another twist.
