Recipe's preparation

  1. Cut quince in quarters and remove the core, also remove any bad blemishes, chop into large dice.
    Cut peeled lemon into 4 removing any seeds.
  2. Making sure the quince doesn't weigh anymore that 1 kg place the chopped quince and lemon into the TM bowl with MC in, 15 Sec Sp 6, scrape down side of bowl.
  3. Add water, Cook 30 Min 100C Sp 3 steam basket on top until the aroma is of floral perfume.
  4. Carefully turn the speed dial up to 6-7 for 20 Sec, repeat if not smooth.
  5. Weigh in sugar approximately 3/4 of the weight of fruit.
    Combine with MC in 10-20 Sec sp 4, scape down the side of bowl and rinse the lis to remove andy sugar/fruit particles.
  6. Insert the Butterfly whisk (remember it fits on the lefthand side of the highest blade). With the MC off place the steamer basket on top of lid cook 30-45 min Varoma Sp2 or until desired colour and texture is reached Cook a further 10-15 minutes if required.
  7. Quickly pour into a jug, make sure you scrape out the bowl well, then into your choice of containers.
    I pour mine into mini plastic sauce containers with lids, perfect size for a cheeseboard.
    You can also pour into a lined tray.
    Allow to air dry, place lid on if using a container or cut and store in an airtight container.
    I store mine in the refrigerator, Keeps for 1 year.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
