Roasted Pumpkin and Cashew Hommus
- 1 butternut pumpkin, cut in quarters and roast til soft in oven
- 1 clove garlic
- 200 g raw cashews
- 1 lemon, juiced
- 2 tbsp tahini, made in TM
- 1/2 tsp Sea salt, fine
- 50 g Olive Oil - EVOO is best, more if needed

grind cashews and garlic for 10 sec speed 10
add flesh of roasted pumpkin, and all other ingredients.
mix together 10 secs speed 7 til all combined or til desired consistenct is reached.
For a thinner/creamier dip add more olive oil.
