  • 1 clove garlic
  • 65 grams Parmesan cheese, cubed
  • 125 grams Unsalted Cashews
  • 80 grams rocket
  • 1 tablespoon Sweet chilli sauce
  • 30 grams olive oil
  • 30 grams canola oil
  • 1 lime, juice
  • 1/2 teaspoon salt

Recipe's preparation

    Rocket and Cashew Dip
  1. 1. Place garlic and parmesan cubes into TM bowl 4 sec / speed 8. Scrape down sides of bowl.

    2. Add remaining ingredients into bowl pulse on turboDough mode"Dough mode" 1 sec 6-8 pulses.

Tip

Serve with crackers or vegetable sticks.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    Yum! Substituted a few ingredients as I didn’t have what the recipe called for - used pecarino cheese instead of Parmesan, use extra virgin oil only and used lemon instead of lime juice. Absolutely delicious 👏🏼

    This was yummy, even had the non rocket loving child eating it!!

    Love it except I had to increase the pulsing time as most of the nuts and rocket were still whole. Not keen on canola as it is not suppose to be that good for you. Might try it with just olive oil next time.
