Ingredients
Sauce
- 500 g red chilli
- 60 - 100 g brown sugar, to taste
- 40 g vinegar
- 4 - 5 cloves garlic
- 1 teaspoon salt
- 100 - 200 g water, to desired consistancy

Roughly chop whole chillies for 3 seconds on speed 7
add all remaining ingredients and cook on 90 degrees for 60 mins speed 2 with MC removed and TM Basket on top
Once cooked puree the sauce on speed 9 for 1 minute. Check the consistancy, if too thick add more water and mix again on speed 9 for 1 minute.
Tip
Start off with less water and sugar as it is easier to add more later.
Season with more salt if preferred
This recipe can easily be doubled with a kilo of chillies, which I do for my chilli sauce loving hubby.

Although this is way too hot for me (amateur!) my family who love hot sauce alway beg me to make it for them. Thanks for sharing such an easy and delicious recipe!
My Heat Freak partner grows his own Scorpion, Reapers and other crazy chillis.
He can not stop raving about this sauce since I made it a few days ago to use up our massive chilli overload in the freezer.
I added about 50g more water because he specifically wanted a tobasco sauce consistency and it was perfect.

I made this with a mix of chillis for a Hot Food Freak friend of mine. She cant get enough!
I halved the ingredients and cooking time. Had enough to fill 250ml jar. Very hot chilles labelled the jar clearly. Easy way to use up container of chillies from friends garden that has been floating around in freezer.
Made mine with a mix of chillis, lol, too hot to handle!!!! Have been using it diluted.
If you want a mellow version scrape out the seeds from half the chillis

Made as per above ingredients, though varied with 300gm of normal green and red chillis, 30gm of hot red chillies and 5 habaneros and 1/2 a white onion. Obviously not as hot as if with just Hot chillies but still got plenty of KICK.
