1) CUT A SMALL CROSS ON BOTTOM OF EACH TOMATO AND PLACE IN DEEP DISH AND COVER WITH BOILING WATER FOR 2 MINUTES
2) PLACE ONION QUARTERED IN TM TOGETHER WITH GARLIC ON SP7 FOR 3 SECONDS SCAPE DOWN SIDES- REPEAT SP7 FOR 3 SECONDS
3) ADD OIL AND SAUTE VAROMA TEMP SP1 FOR 4 MINUTES
4) LIFT TOMATOES OUT OF BOILING WATER WITH TONGS AND PEEL SKIN OFF AND CORE - CUT IN HALVES AND PLACE IN TM WITH ONION AND GARLIC SP5 3 SECS
5) ADD LEMON RIND AND BOUQUET GARNI AND STEVIA
6) COOK 5 MINS VAROMA REVERSE WITH HALF MC SPEED SOFT, THEN REDUCE HEAT TO 80 DEGREES FOR 50 MINS REVERSE SPEED SOFT WITH NO MC IN PLACE.
7) REMOVE BOUQUET GARNI AND LEMON RIND AND SLOWLY INCREASE SPEED TO SPEED 9-10 FOR 30 SECS
