- 60 grams Butter
- 60 grams plain flour
- 1 teaspoon Good flakey salt
- 1 teaspoon Freshly cracked black pepper, or to taste
- 450 grams whole milk

Place white wine and butter in Thermomix and cook for 5 mins on 100c ,speed 4
Add the remainder of the ingredients and cook for 8 mins on 90c ,speed 4. Check for your personal consistency.
I have used here in the picture as a sauce for crumbed oysters. YUM!!!

Great base recipe, thanks. I added garlic in the first step and cooked it with wine and butter. I doubled the whole recipe, used some fish stock and cream in the liquid measurements and cooked it for 12 minutes.
Used for lobster / cray fish mornay beautiful just added some fresh chives when added the lobster meat at end
