Ingredients

Pecans

  • 125 grams pecan nuts
  • 80 grams Maple Syrup (or Maple flavoured syrup)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Brussels Sprouts

  • 500 grams brussels sprouts, trimmed
  • 1 litre water

Dressing

  • 62 grams Dijon mustard
  • 2 tablespoons Apple Cider Vingear
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar (raw or white)

Recipe's preparation

  1. 1. Add 1 cup of pecans to Thermomix. Insert measuring cup and dice 2 sec/Speed 5.

    2. Roast pecans 6 min/Varoma/Speed Gentle stir setting"Gentle stir setting" .

    3. Add 80 grams of maple syrup, 1/2 teaspoon of salt and 1/4 teaspoon of pepper to Thermomix. Maple syrup can be reduced to taste comfortably by a third. Cook for 1:30 min/100 degrees/Speed 1.5. Set aside and swirl Thermomix with water to rinse.

    4. Add 500 grams of trimmed brussels sprouts and 1 litre of water to Thermomix. Cook for approximately 8 minutes/100 degrees/Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" , until brussels sprouts softened but still green. Drain when complete.

    5. While sprouts are boiling, combine 62 grams (1/4 cup) of dijon mustard, 2 tablespoons of apple cider vinegar, 2 tablespoons of lemon juice and 1 tablespoon of sugar in bowl. Mix well.

    6. Combine drained brussels sprouts and mustard dressing in a serving bowl. Sprouts can be set aside to cool or served as is. Add pecan mixture prior to serving and mix well.

Tip

Maple flavoured syrup can be substituted as a more economical alternative.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
