Ingredients
Cauliflower and cranberry salad
- 200 grams pearl barley
- 1/2 cauliflower, cut into small florets
- 1 pomegranate, seeds removed
- 75 grams dried cranberries
- 60 grams walnuts, toasted and chopped
- 75 grams shelled pistachios, chopped
- 1 bunch parsley, chopped
- 4 sprigs fresh mint, chopped
- 60 grams olive oil
- 60 grams white balsamic vinegar, or white wine vinegar
- 2 level tablespoons pomegranate molasses, see notes
- Salt and pepper

- Put 1 litre of water in thermomix bowl, and place basket into bowl. Weigh in 200g pearl barley. Cook for 40 minutes, Varoma, speed 2. Meanwhile, cut cauliflower into small florets and place in Varoma tray. Put Varoma in place when pearl barley has 20 minutes left to cook.
Wash barley in cold water when cooked and drain. Allow to cool. Allow cauliflower to cool also.
Combine in a large bowl with pomegranate arils, chopped dried cranberries, toasted and chopped walnuts, chopped pistachios, chopped mint and chopped parsley. I chop the herbs and nuts by hand.
In a jar combine the olive oil, white balsamic binegar, pomegranate molasses (see notes) and salt and pepper. Shake jar and pour over salad then stir gently to combine.
Tip
You can buy Pomegranate Molasses from specialty food stores or make some in your Thermomix by combining 1 litre of pomegranate juice, 110g white sugar and 100g lemon juice in the bowl of your Thermie, cook for 60 minutes, Varoma temp, speed 2, mc off. You will get around 300ml of syrup that will keep for a couple of weeks in the fridge.
Pomegranate season in Australia is November to March.

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
