Ingredients

  • 250 grams broccoli florets, Fresh or frozen
  • 240 grams water
  • 60 grams Butter
  • 150 grams plain four
  • 2 eggs
  • 300 grams Milk
  • 50 grams Plain flour or corn flour
  • 1/2 teaspoon salt
  • 30 grams Butter
  • 125 grams cheese, Cubed or grated
  • 500 grams water (boiled)

Recipe's preparation

    Chicken and broccoli gougere
  1. Preheat the oven to 200 degrees. Put 500g boiled water in TM bowl. Place chicken slices and broccoli florets on Varoma tray and set into place. Steam for 15mins on Varoma temperature on  speed 1. Check that chicken and broccoli is cooked through. Set aside. Empty bowl of water.

    (I sometimes skip this step by using leftover cooked chicken and steam the broccoli in the microwave for 2 - 3 mins)

  2. Add 240g water and 60g butter to TM bowl. Cook at 100 degrees for 10 minutes at speed 1. Add 150g flour. Mix for 30 secs at speed 4. Cool slightly. Set Thermomix mixing for 30 seconds at speed 3 and add eggs one at a time through hole in the lid. Spoon mixture into a greased 25cm tart plate or ovenproof dish, spreading the mixture around the sides of the dish leaving a hollow in the centre.

  3. Put 300g milk in TM bowl. Add 50g flour or corn flour, salt and 30g butter. Cook for 7 mins at 90 degrees on speed 4. (This mixture should be thicker than usual white sauce) In the last 30 secs, add the cheese. Add the reserved cooked chicken and broccoli. Mix for 30 seconds on Reverse + speed 3. Using the spatula, spoon this mixture into the choux pastry shell. Bake in a hot oven for 30 mins. Serve with a seasonal salad or hot baked potatoes.

Tip

I often double this recipe as my children also love it cold the next day. Leave out the chicken to make a lovely vegetarian dish.

    Thank you for creating this.  I have made the vegetarian version doubling the broccoli content - very yummy! Took me a little longer to make,  but next time it will be easier.
