- 1 clove garlic, peeled
- 50 grams Butter
- 1 bunch silverbeet, leaves removed from stalks - thinly slice leaves and stalks
- 100 grams sour cream

Chop 1 clove of garlic 3 seconds/Speed 7 scrape down the sides of the bowl.
Add butter and melt 3 minutes/100C/Speed 2
Add finely sliced Silverbeet stalks to the bowl and cook 100C/"Counter-clockwise operation" /10 minutes/Speed 1
Add finely sliced leaves to the bowl and cook for a further 5 minutes/100C/"Counter-clockwise operation" /"Gentle stir setting"
Remove cooked Silverbeet and strain liquid into a bowl using Simmering Basket keeping the liquid.
Keep cooked silverbeet warm in your Thermoserver and add reserved liquid back into the TM Bowl.
Cook the liquid to reduce by approx half at 100C/Speed 2/No Measuring cup. The time will depend on the amount of liquid you have.
Add 100g Sour Cream and cook for 1-2 minutes/100C/Speed 2
Add reserved silverbeet back into the bowl and mix with sour cream mixture on "Counter-clockwise operation" 10-20 seconds/Speed 2
Serve as a side dish

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
