Recipe's preparation

  1. 1) Grease round cake tin / oval / round tray (20cms)

    2) Turn TM on speed 8 and drop ginger and coriander in bowl for 2/3 secs

    3) Scape down sides and lid of mixing bowl with spatula

    4) Add semolina (coarse), lemon juice, salt, oil, turmeric and mix 15 secs/speed 4

    5) Add yoghurt and water and mix 15 secs/speed 4

    6) Add Eno and mix 15 secs/speed 4

    7) Pour into cake tin or oval tray

    tmrc_emoticons.8) Add 1000g boiling water to TM bowl and place Varoma dish into position. Arrange 2 wooden skewers , cut to fit (approx. 19cms) in Varoma dish. Rest cake tin on top of skewers ensuring it is levelled, cover and stem for 15 mins/Varoma/Speed 1

    9) If using oval tray place the same on tray of Varoma and do not use the skewers

    10) Prepare tempering and spread over the top once dhoklas are steamed.

    11) Garnish with coriander

    12) Serve plain or with sweet tamarind chutney

Tip

1) Using wooden skewers in the base of the Varoma dish creates a trivet for the cake tin to stand on. This also enables the steam to circulate evenly around the tin without any obstructions.

2) Serve with pickle or chutney and salad or as an accompaniment to any main dish
