  • 1/2 --- cup mayonnaise, As per EDC Cookbook P40 or TM5 Recipe Chip
  • 1/3 Cup Granulated Sugar
  • 1/4 cup milk
  • 1/4 cup buttermilk
  • 1 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons white vinegar
  • 1/2 teaspoon salt
  • 2 pinches ground pepper
  • 1/2 head of small cabbage, roughly chopped
  • 2 carrots, roughly chopped
  • 1 green apple, cored and quartered
  • 1/3 red onion

Recipe's preparation

  1. Place cabbage, carrot, apple, and onion in mixing bowl and chop 8sec/speed 4. Scrape down sides with spatula.  Check to see if it's fine enough for you, and if not continue using for another 4sec/speed 4. Keep going until you get the consistency you like. 

  2. Place mayonnaise, salt, and pepper into mixing bowl, then add 1/2 of the amounts for the granulated sugar, milk, buttermilk, lemon juice, and white vinegar and mix Counter-clockwise operation"Counter-clockwise operation" 5sec/speed 5 or until mixed through.  Taste and check consistency.  Add remaining sugar, milk, buttermilk, lemon juice and white vinegar if required Counter-clockwise operation"Counter-clockwise operation" 5 sec/speed 5.  Repeat mixing until all wet ingredients are mixed through.

    ** NOTE - Liquid amounts will depend on size of cabbage, carrot and apples.  If only using small head of cabbage and small carrot and apple then you will only need 1/2 of the liquid ingredients.

  3. Transfer to serving bowl or airtight container.  Store in refrigerator.  Can be made in advance as flavours improve overnight.

Tip

** NOTE - Liquid amounts will depend on size of cabbage, carrot and apples.  If only using small head of cabbage and small carrot and apple then you will only need 1/2 of the liquid ingredients.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
