Ingredients

Use what ever combo of veges need to be used up!

  • 200 grams sweet potato, peeled and chopped
  • 1 brown onion, peeled and quartered
  • 2 cloves garlic
  • 100 grams hard cheddar cheese, cubed
  • 2 eggs
  • 150 grams Milk
  • 150-200 grams plain flour or GF plain flour
  • 50 grams parmesan, milled
  • --- salt and pepper to taste
  • 100 grams green beans, chopped
  • handful Spinach Leaves

Recipe's preparation

  1. Add sweet potato, onion, garlic and cheese to the bowl and chop for 4 seconds on speed 4. Scrape down side of the bowl. Chop for longer if too chunky for your liking.

  2. Add eggs, milk, flour, parmesan and s&p and whizz forward for about 5 seconds on speed 4. If your mixture is too thick add more milk, too runny add a little more flour.

  3. Add beans and spinach and mix to combine, I did forward on speed 5 or 6 for about 10 seconds. If you are using baby spinach leaves  you may want to use reverse to mix (no higher than speed 4 remember!)

  4. When your mix is combined to your liking heat a non stick pan and fry dollops in your preferred method of frying (oil or butter or a combo or ???!!) Flip until each side is nice and brown and the centre isn't doughy.

  5. We enjoyed these with sauce for lunch, one liked soy sauce, one sweet chilli and the other HP sauce...

  6. Variations
  7. You could use carrot, mushrooms, zuchinni, cauliflower, brocolli, pretty much anything in the fridge. I don't think I would use potatoes because of the starch in them, it would alter the texture of the batter.

Tip

These would probably make a good lunch box snack if your family don't mind them cool.
