Ingredients
Chicken and Corn Soup
- 2 chicken breasts, Diced largely
- 1 cm fresh ginger
- 3 cloves garlic
- 1 cm Fresh Tumeric
- 20 g Olive or Macadamia Oil
- 420 g Creamed Corn
- 2 teaspoons sesame oil
- 2 tablespoons tamari
- 2 teaspoons fish sauce
- 2 stalks spring onion, finely diced, plus extra for garnish
- Chicken bone broth, to fill to the 2L mark
- 4 tablespoons cornflour
- 4 tablespoons water

Place lid on empty TM bowl, turn onto speed 7 and drop garlic, ginger and turmeric in through the whole in the lid. Chop until you can no longer hear the pieces being flung around the bowl (approx. 5 seconds). Scrape down sides.
Add Olive or Macadamia oil, sauté 2 minutes, 100 deg, speed 1.
Add corn, sesame oil, soy sauce, fish sauce, stock, spring onion and chicken first, then add chicken bone broth to the 2L fill line on the TM bowl.
Cook with MC removed and simmering basket in place for 20 minutes, 100 deg, "Counter-clockwise operation" , speed 1.
Mix the water and cornflour together and in the last 2 minutes of cooking add mixed cornflour and water through the lid.
If you prefer your chicken to be shred more, turn TM on to "Counter-clockwise operation" , speed 4, for 5 seconds or to your liking.
Serve warm.

Tip
If you don't have any Bone Broth, you can use 1 heaped TBSP of stock concentrate and replace Bone Broth with water.

Great recipe! I used fresh corn off the cob and a small amount of creamed corn. And I shredded the chicken at the end. It has a lovely flavour and texture. Would definitely make again.
