Ingredients
Soup
- 1 Fresh Butternut, Chopped into cubes
- 1 brown onion, Cut into half
- 1 tin chopped tomatoes
- 3 tbsp tomato paste
- 1 tsp ground cumin
- 1 tbsp curry powder
- 30 g Olive oil or coconut oil
- 2 Tins of lentils, washed & drained
- 2 garlic cloves
- 1 handful flat leaf parsley
- 1-2 cups water

Add onion, garlic & parsley into TM bowl & chop 3 secs / speed 7Add curry, cumin & oil & cook for 3 mins/ varoma / speed 2Add butternut cubes, tinned tomatoes, tomato paste, veggie stock & 2 cups water (make sure it's not too fill otherwise just add 1 cup of water to start)Cook for 20 mins / varoma / speed 2Add lentils & cook for a further 5 mins / "Counter-clockwise operation" /varoma / speed 2Serve with a generous blob of greek yoghurt**Note** - it's also delicious if you add in a cup of bacon bits
Tip
Remove the MC during the cooking process & replace with the steaming basket

Delicious! I roasted the pumpkin, a garlic clove and the onion and then followed the recipe from there.
