Soup
- 1 brown onion, Peeled and Quartered
- 25 g Butter
- 600 g chicken stock
- 225 g potatoes, 1cm cubed
- 450 g carrots, 1cm cubed
- Salt & pepper to taste
- 50 g cream

Chop Onion speed 6 for 3 seconds. Scrape down sides.
Add butter to the bowl and saute on Varoma temp for 3 minutes speed 1 no MC. Scrape down sides.
Add Carrot, Potato, stock and the salt and pepper. Cook 25min 100 Degrees speed 1.
Blend mixture from speed 4 to 8 working slowly up the speeds for 30 seconds.
Add the Cream and mix speed 4 for 5 seconds.

Tip
This soup can be frozen in portions for up to 3 months.
For a Vegetarian option use Vegetable Stock.
The carrots and potato can either be peeled or not, depending on your own personal tastes.

I added some Chorizo (fried) at the end with the cream because I had it to use up. But pretty good. May add garlic next time.
Great quick and easy soup. Handy for if you have extra carrots to use up.
I added garlic as I'm recovering from a cold and I have to admit it was a little overpowering.
I also added a little ground coriander. I only had powder stock to use but I think homemade stock would improve the flavour.
This was yummy. I added some fresh sage, basil & garlic when cooking the onion and used vege stock. I didn't add any cream and it was still a nice smooth creamy soup.

Roasted my carrots first and added 200ml cream at the end. It was delicious! Will definitely make again
I m using Maggi Chicken stock per cube is 20gram. I added 60gram and it came too salty, at first i wanted to put 600gram. For the above receipes i recommed 20gram if using Maggi chicken stock, Thank you for the receipes, everyone in the house enjoy and it was delecious, I gave my neighbours and they did not belive we made it, they thought its from the restaurant.
