Yumo!! I made this soup Friday night and it was fabulous.

I only used the sweet potato, celery and carrot as the mixed veggies. I also used thighs I didn't have breast on hand.

I also mixed it to make the veggies and chicken shredded a little more once cooking was finished.

It was so tasty and easy to make. Will certainly use this again.Smile

Such a quick and easy recipe. I had some leftover roast chicken so used that and just put it in in the last 6 mins to heat it through. Was still delicious. Thanks tmrc_emoticons.)

Great recipe, used leftover veggies, hard and soft all together and turned out fine. Also blitzed it for a few seconds at the end

Loved it...was quick and easy (I did it while the baby was asleep)...I had to give it a quick blast at the end as I didn't dice the veggies enough when prepping, but it came out awesome!! Thanks for sharing

Hi thank you for the recipe, its really good, I tweaked it a bit and added 1/2 tin of creamed corn at the end which just sweetens it up a tad, next time I am going to chop my vegies smaller I was a bit worried that they wold turn to mash but they didn't yey! I used carrot, zuchinni, sweet potato, and celery.  Cooking 1
