Ingredients

Coconut and Pea Soup

  • 2 spring onions, large
  • 2 tbsp olive oil
  • 200 grams frozen peas
  • 400 grams coconut milk
  • 1/2 bunch fresh coriander
  • 1 tsp Vegetable stock paste
  • 1 pinch salt
  • 1 pinch ground white pepper
  • 1 tsp Black Sesame Seeds, Garnish
  • 1 spring onion, finely chopped - Garnish
  • 2 dashes olive oil, Garnish

Recipe's preparation

    Coconut and Pea Soup
  1. 1. Place bunch of coriander and spring onions into mixing bowl and chop for 3 Seconds/Speed 7.

    2. Scrape down the mixing bowl with spatula and chop for a further 2 Seconds/Speed 7.

    3. Add olive oil and cook for 3 Minutes/100c/Speed 1.

    4. Add coconut milk and vegetable stock paste and cook for 4 Minutes/Varoma/Speed 1.

    5. Add peas, salt and pepper and cook for 5 Minutes/100c/Speed 1.

    6. Blend for 2 Minutes/Speed 4-8, gradually increasing the speed from speed 4 to speed 8.

    7. Pour into serving bowl, garnish with sesame seeds, chopped spring onion, a drizzle of olive oil and serve.
