Ingredients

  • 1 brown onion, Halved
  • 1 tablespoon olive oil
  • 1 --- Large Head Cauliflower, Cut into florets
  • 1 tablespoon vegetable stock concentrate
  • 600 grams water
  • 1/2 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1 1/2 teaspoon cumin
  • 250 grams coconut milk
  • 50 grams Roasted Cashews
  • 2 tablespoons fresh parsley, Finely chopped
  • Salt and pepper, To taste

Recipe's preparation

  1. Chop onion 3 seconds speed 7.

  2. Add olive oil and saute 2 minutes 100 degrees speed 1.

  3. Add cauliflower, vege stock concentrate, water and spices and cook 20 minutes, 100 degrees speed 1.

  4. Puree ingredients 1 minute speed 9, gradually increasing the speed from speed 1 to speed 9.

  5. Add coconut milk and combine 10 seconds speed 3.

  6. Add salt and pepper to taste and serve with roasted cashews and top with parsley.

    Absoultey beautiful. I didn't put the cashews or parsley in it. Kept in the fridge for a few days also
