Ingredients
- 1 red onion, halved
- 1 carrot, roughly chopped
- 1 celery stalk, roughly chopped
- 1 tablespoon extra virgin olive oil
- 3 teaspoons ground cumin
- 2 teaspoons Ground Coriander
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 50 grams long-grain white rice
- 60 grams red lentils
- 60 grams green lentils
- 2 tablespoons vege stock concentrate
- 1000 grams water
- 1/2 can chickpeas, rinsed, drained
- 1/2 can canellini beans, rinsed, drained
- Coriander leaves to garnish

Place onion, carrot and celery into bowl, chop 3 seconds, speed 5. Scrape down sides.
Add oil sauté 3 minutes, varoma, speed 1.
Add all spices and cook 1 minute, 100c, speed 1.
Add rice, lentils, stock paste and water and cook 15 minutes, 100c "Counter-clockwise operation" speed 1.
Add chickpeas and beans and cook a further 5 minutes, 100c "Counter-clockwise operation" speed 1.
Season to taste and top with coriander to serve.

I tryed making this soup today and omg so good... perfect for this cold weather, I just cooked mine for a further 20mins as I like my lentils really soft... definitely making this again. Thank you so much...
Made this several times now, absolutely love it. Have not changed a thing to the recipe.

easy to make. I didn't have any green lentils so left them out, but it didn't matter.
tip: put a splatter-guard (eg varoma) over the hole in the TM lid to stop the splashes.
Just a couple of tips I forgot to add:
~ As you only use half a can of beans and chickpeas, I freeze the remaining beans and chickpeas in a container ready for next time I make the soup.
~ If you don't have any vege stock concentrate, can use 1L of liquid vegetable stock, and omit the water.
