Ingredients

Soup

  • 180 grams onion, (Approx 180g) cut into halves
  • 20 grams olive oil
  • 10 grams ginger, Sliced into coins
  • 2 garlic cloves
  • 1000 grams pumpkin, Approx weight. Peeled, cut into pieces
  • 1 tbsp Vegetable stock paste
  • 500 grams water
  • 1 tsp Ground Coriander
  • 1 tsp ground cumin
  • 1/2 tsp dried chilli flakes, Adjust to taste
  • 2 tbsp Sour cream or double cream, (Optional)
  • Pinch to taste Salt and pepper, Serving
  • Small handful to taste fresh coriander leaves, Serving

Recipe's preparation

    Preparation
  1. Place ginger into mixing bowl chop 5 sec/speed 7.
  2. Add onion and garlic chop 3 sec/speed 5. Scrape down sides of mixing bowl.
  3. Add Olive oil and sauté 4 min/120deg/speed 1.
  4. Add pumpkin chop 15 sec/speed 7. Scrape down sides of mixing bowl.
  5. Add water, stock paste, chilli flakes, cumin and coriander powder cook 20 min/100deg/speed 1.
  6. Add sour cream or double cream (optional) and blend using blend mode Blend"Blend"
  7. Season to taste with salt and pepper, garnish with fresh coriander and more cream (optional) serve hot.

Tip

This has been developed for the TM6/TM5 only. Not to be used in TM31 due to smaller capacity bowl.

TM5 users- when its time to blend soup, blend 1 min/speed 5-9, increasing speed gradually from speed 5 to speed 9.

To make vegan/dairy free omit sour cream/cream.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
