Ingredients
Soup
- 1 medium onion, peeled & halved
- 1 clove garlic
- 40 g olive oil
- 400 - 500 g pears, quartered and cored, no need to peel
- 400 - 500 g parsnips, roughly chopped
- 1 medium potato, no need to peel
- 1 tablespoon TM Vegetable stock paste, or chicken stock paste
- 500 g water
- 1/2 to 1 cup of milk
- Pepper and nutmeg to taste

Chop onion and garlic on speed 6 for 4 seconds. Add oil and saute for 4 minutes at 120 degrees (Varoma temp for TM31) on speed 1 with MC removed.
Add pears, parsnips and potato and chop on speed 5 for 5 seconds.
Add stock paste and water. With MC on, cook for 20 minutes at 100 degrees on speed 2.
Puree for one minute, very gradually increasing to speed 9.
Add milk to reach the desired consistency (if there is space), nutmeg and pepper and mix on speed 3 for 10 seconds. If it is too full to add milk to the bowl, (particularly for TM31), pour soup into Thermoserver and stir milk in.
Tip
While this might sound an unusual combination for a soup, the pears and parsnips compliment each other extremely well, resulting in a delicious, hearty soup.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
