Ingredients
Potato, bacon and leek soup
- 30 grams Butter
- 1 leek, Roughly chopped
- 1 onion, Roughly chopped
- 2-3 cloves garlic
- 3-6 bacon rashers, Roughly chopped (rind removed
- 600 grams potatoes, Skin on, roughly chopped
- 2 tablespoons Thermie veggie stock
- 750 grams water
- 150-200 grams cream
- 50-60 grams cream cheese
- pinch cracked pepper, To taste

- 1. Add Leeks, Bacon, Onion & Garlic to bowl. Chop 5secs, speed 5. Scrape down sides of the bowl and repeat if necessary.
2. Scrape down bowl. Add Butter to bowl. Cook 5mins, 100c, speed 1
3. Add potatoes and cook 5mins, 100C, speed 1
4. Add stock paste, water and cook 20mins, 100C, speed 2 or until potatoes are soft.
5. Puree slowly increasing the speed from 1-7 for 1-2mins untill smooth.
6. Add cream, cream cheese and season with pepper to taste.
7. Cook another 3mins, 100C, speed 2 to incorporate cream.
8. Serve and enjoy
Dont forget the crusty bread or toast to serve

Tip
If the potatos are well washed then there is no need to peel them and not peeling them retains more of the nutritional value

Great soup. Had to thicken a little at the end. Full of flavour and perfect for winter
Yummmmm!! I used 2x rashers of bacon and a knob of salami that I had to use up. Also didn't puree as much as I like it kinda chunky. Swapped out most of the potato for some cauliflower & sweet potato that I also wanted to use up.

Yum! Tastes amazing! my kid's love it and had extra helpings.. I made it as per the recipe and added a teaspoon full of sour cream after it was served.. and crusty bread of course "Counter-clockwise operation"
