Ingredients
Rich Tomato Soup
- 1 onion, (chopped - quarters)
- 2 garlic cloves, (peeled)
- 1 carrot, (cut into 2cm pieces)
- 2 sticks celery stalk, (cut into 2 cm pieces)
- 2 tbsp olive oil
- 1 tbsp Vegetable stock paste
- 600 g water
- 400 g tin of plum tomatoes
- 300 g tomatoes, (vine ripened - with vine on)
- fresh basil, for garnish

- Place onion and garlic into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add the olive oil and saute 3 min/120C/speed 1.
- Add the carrots and celery, chop 15 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add water, stock paste, tin of plum tomatoes.
- Place simmering basket into the mixing bowl and add the vine ripened tomatoes into the basket. Cook, 20 min/100C/speed 1.
- Remove basket with aid of spatula, remove vine from tomatoes, and place tomatoes back into the mixing bowl. Blend 1min/speed 5-9, increasing speed gradually from speed 5 to 9.
- Season to taste with salt and pepper, garnish with the fresh basil and serve hot with your choice of freshly baked bread.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
