Ingredients

Tomato Soup

  • 1000 grams tomatoes, cored
  • 1 Capsicum, deseeded
  • 1/2 teaspoon ground pepper, to taste
  • 40 grams extra virgin olive oil
  • 1 teaspoon sea salt, to taste
  • 4 garlic cloves
  • 4 spring onions
  • 1 tablespoons TM vegetable stock
  • 80 grams water, room temperature
  • 50 grams tomato paste
  • 100 grams natural plain yoghurt

Recipe's preparation

    INSTRUCTIONS
  1. Place tomatoes, capsicum, oil, salt and pepper into a pan and roast in the oven at 170˚C for 50 mins.

     

    Place spring onions and garlic into mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl and repeat if necessary.

     

    Add oil and sauté 3 min/varoma/speed 1.

     

    Add roasted vegetables and roughly chop 3 sec/speed 4.

     

    Add remaining ingredients and cook 8 mins/100˚C/speed 1.

     

    Purée 30 sec/speed 9, gradually increasing speed from speed 1 to speed 9.

Tip

For a quicker soup, skip the roasting.

For a smoother soup, peel the tomotoes before roasting.

INSTRUCTIONSCore the tomatoes and score a cross in the bottom with a knife.Dunk them in boiling water for 30 sec.Run them under cold water and the skins will pop off, some may need persuasion!

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Very flavoursome. I added a small red chilli. Because the recipe uses fresh tomatoes I will definitely make it again. Also I didn't add the yoghurt. Thank you.
