Ingredients
Spicy Cauliflower and Bacon Soup
- 40 g olive oil
- 6 short loin bacon, finely sliced
- 1-2 garlic cloves, peeled
- 1/2 Large Brown Onion, peeled
- 500 g cauliflower, chopped into florets
- 1 large potato, roughly chopped
- 1 tsp ground cumin
- 1/2 tsp Ground Coriander
- 1 tsp dried chilli flakes
- 1-2 tbsp vegetable stock concentrate
- 1 litre water
- 100 g Pouring Cream

1. Add 20g olive oil and bacon pieces into bowl. Saute with the measuring cup OFF for 10 mins - 120 degrees - Speed Soft Reverse
Remove bacon and set aside (you can put onto a paper towel to drain off the oil if you wish)
2. Add garlic cloves and onion. Chop 3 seconds - Spd 5. Add 20g olive oil. Saute 3 mins - 120 degrees - Spd 1
3. Add cauliflower and potato. Chop 15 seconds - Spd 7.
4. Add water, veg stock concentrate and spices. Cook 20 mins - 100 degrees - Spd 1
5. Add cream. Puree soup - set time for 1 min - Spd 5. You will hear the blades increasing in speed gradually. Once you hear the blades have stopped increasing, turn the dial incrementally up to speed 9 to finish pureeing.
6. Transfer to bowl or Thermoserver. Stir in bacon pieces. Season with salt and pepper to taste.

VARIATIONS
COOK BACON IN VAROMA Instead of sauteeing bacon and setting aside at the start, you could simply cook in the Varoma bowl at step
PARMESAN VARIATION
At the start, grate 40g Parmesan (cut into cubes) 10 seconds - Spd 10Set aside. Wash and dry bowl. Proceed with rest of recipe. Stir in parmesan at the end along with the bacon pieces.
