Ingredients

Soup

  • 100 grams carrot, 3 cm pieces
  • 100 grams Zuchini, 3 cm pieces
  • 100 grams red capsicum, 3 cm pieces
  • 100 grams cabbage, Rough Chop
  • 100 grams Celery, 3 cm pieces
  • 1 brown onion, Quartered
  • 3 cloves garlic
  • 60 grams olive oil
  • 150 grams Cashew Nuts (RAW)
  • 1 tablespoon TM stock paste
  • 750 grams water
  • 1 tablespoon Chives (Chopped)
  • 1 tablespoon Thyme (Fresh Leaves)
  • 200 grams Corn Kernels (Cut Fresh from Cob)
  • 2 tablespoons Nutritional Yeast Flakes
  • Salt & Ground White Pepper to Taste

Recipe's preparation

  1. 1. Add to TM Bowl carrot, zuchini, capsicum, cabbage and celery and then chop 7 sec/speed 4 Remove and set aside

    2. Quick rinse TM Bowl

    3. Add to TM Bowl onion and garlic then chop 5 sec/speed 5

    4. Scrape down sides of TM Bowl

    5. Add olive oil and saute 5 min/120c/speed 1

    6. Add cashew nuts set to 40 sec/speed 9

    7. Scrape down sides of TM Bowl

    8. Add the vegetables set aside earlier, the TM stock paste and water then cook 11 min/100c/speed 1

    9. Add corn, chives, thyme, nutritional yeast flakes, salt and pepper then cook 3 min/100c/speed 1.5

    Serve with some chopped chives sprinkled on top and a swirl of olive oil

    SmileDelicious warming soup! Comfort feeling and perfect flavour! Added 2 spoons of the homemade vegetable stock as recommended than didn’t need much extra salt. Also didn’t have nutritional yeast so I added Parmesan and came up perfectly!

    Absolutely delish!! I forgot to buy cashews, so I substituted with some coconut milk and it was still really nice but will definately make it with the cashews next time. Such a tasty chowder!!

    A great hearty and healthy soup. I ended up cooking stp 9 for 6 mins to cook the kernals through. Also, next time i might add another tbs of stock concentrate for a little extra depth.
