Ingredients

Soup

  • 1 onion, Peeled & quartered
  • 2 cloves of garlic, peeled, I add more as I like garlic
  • 1 level tbsp olive oil
  • 1 pinch ground chili, this is to taste
  • 1000 grams sweet potato, peeled, roughly cut up
  • 1000 grams water
  • 1 level tablespoon Veg Stock Paste
  • 1 level tablespoon tomato paste, this can be left out
  • 3 level tablespoons Unsalted Smooth Peanut Butter

Recipe's preparation

    Sweet Potato & Peanut Butter Soup
  1. 1.       Put the onion & garlic into the bowl

    2.       Put the measuring cup in

    3.       Blitz for 5 seconds on speed 7

    4.       Scrape down the sides

    5.       Add olive oil

    6.       Put the measuring cup in

    7.       Cook for 5 mins, 100 degrees, speed 3

    8.       Add chili part way through

    9.       Scrape down the sides

    10.   Add Sweet potatoes, Water & stock

    11.   Put the measuring cup in

    12.   Cook for 20 mins, 100 degrees, speed 2

    13.   Add tomato paste

    14.   Cook for a further 2mins, 100 degrees, speed 2

    15.   Add peanut butter

    16.   Put the measuring cup in

    17.   Slowly increase the speed so the soup is getting liquidized and the peanut butter is being mixed in

     

    18.   Serve once its smooth

Tip

I also use this a pasta sauce for my daycare children, they love it. I add frozen peas and corn, which helps it cool down and up the veg content

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
