Ingredients
- 3 cloves garlic
- 1 Large leek
- 30 grams olive oil
- 1 large sebago potato, roughly chopped
- 2 cans 425g tins cannelini beans drained or equivalent pre-cooked
- 1 heaped tablespoon Vegetable stock paste
- 750 grams water
- 1 sprig thyme leaves, fresh
- 3 teaspoons lemon juice
- 4 slices Pancetta or Proscuitto or Bacon

Place garlic and leek into mixing bowl and chop for 3-5 seconds on speed 7.
Weigh in olive oil and sautee on Varoma/5mins/speed 1.5.
Add potato and beans, cook on 100degrees/2 mins/speed 1.5.
Add stock paste and water and cook on 100 degrees/10-12 minutes/speed 1 with the MC off and steaming basket on top of lid.
If the beans and potato aren't cooked to your liking cook for a further 5 minutes/100 degrees/speed 1 with the MC off and steaming basket on top.
Pour half of the soup into a Thermoserver. Blend remaining soup for 1 minute/speed 9 gradually increasing speed from speed 1 to 9.
Return the other half of the soup back to mixing bowl. Add lemon juice and thyme leaves and stir 1 minute/"Counter-clockwise operation" /speed 1.
Serve with crispy pancetta slices and a lemon wedge if desired.
Tip
If you prefer a silky, smooth soup, omit pouring half of the soup into a thermoserver and blend the entire amount for 1 minute/speed 9, gradually increasing from speed one to speed 9.
For a vegetarian option, omit pancetta and serve with Dani Valent's virtual bacon dust.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
