Ingredients
Lentil and pumpkin burgers with roast tomato sauce
- 250 grams cherry tomatoes, halved
- 10 grams basil, finely shredded
- 1 level teaspoon sugar
- 450 grams pumpkin, cubed
- 2 tablespoons olive oil
- 1 onion, halved
- 1 clove garlic
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seed
- 300 grams red lentils, washed
- 100 grams breadcumbs, fresh
- 50 grams Oil for frying

Preheat oven to 180 degrees. Arrange tomatoes cut side up and roast for 30 minutes.
Cool for 15 minutes.
Put tomatoes in TM bowl and Turbo pulse for 5-8 seconds.
Stir through shredded basil, sugar and salt and pepper to taste.
Set aside.
Put 1 Litre of water in TM bowl.
Put pumpkin in veroma tray and cook for 20 minutes ,veroma speed 2-3.
Put lentils in steaming basket, and cook for final 10 minutes.
Set pumpkin and lentils aside.
Empty and dry TM bowl.
Dry roast cumin and coriander seeds for 3 minutes 100 degrees speed 1, then mill seeds for 2 minutes speed 8.
Place onion and garlic in TM bowl and chop 5 seconds speed 7.
Add oil and cook for 3 minutes 100 degrees speed 1.
Place cooked pumpkin in TM bowl and mash for 10 seconds speed 5.
Add breadcrumbs and mix for 40 seconds reverse speed 3.
Roll into balls and lightly fry for 1-2 minutes on each side.
Serve with roast tomato sauce.

I wish I'd read the comments prior as mine were also too sloppy. I don't know if it was from overlooking the lentils or pumpkin? It was a lovely flavour so would be good to work out how to make them into a firmer patty.
I added the lentils with the pumpkin but will try adding them with the breadcrumbs next time as it was a little sloppy. I put the pumpkin mixture in the fridge to cool and get a bit firmer. I sprayed a non stick pan with olive oil and used a spatular to put some mixture in the pan, it was too sticky to roll into balls, then flattened it and sprayed the top with oul before turning. My vegan daughter liked them.
When do you add the lentils? I think a step has been missed in the recipe.
