Ingredients

Mussels with white wine & tomatoes

  • 1000 gram mussels, debearded
  • 1 bunch basil / flat leaf parsley / thyme / oregani, washed
  • 150 gram white wine
  • 150 gram water
  • 1 can tomatoes (diced/whole)
  • 1 red or green chilli (small), leave seeds in for a little zing
  • 2 onions (medium), peeled and halfed
  • 4 celery stalks, roughly chopped
  • 30 grams olive oil, or a good glug

Recipe's preparation

    Mussels
  1. In TM bowl mince garlic & chillisp5 7secs

     

  2. Add onion & celery sp7 5secs, scrape sidesAdd oil 

     

  3. Add oil Saute 2mins 100 degrees sp3

  4. Roughly chop or hand tear herbs add with    tomatoes white wine stock & water

  5. Mussels
  6. Place clean mussels in varoma and set ontop on TM

    Cook sauce and mussels at same time 12-15mins Varoma temp sp3  (reverse for chunkier sauce

  7. Garnish with salt, pepper, sprigs of herbs or chilli

    Serve with crusty bread / rice

    I thought the flavour was reasonable, but it seemed we had way too much soup/sauce left over. I ended up using the leftover soup to cook my rice in. Turned out yummie!
