Ingredients
Wonton Cups
- 2 tbsp olive oil, plus extra for greasing
- 24 wonton wrappers, thawed
- 1/4 seal salt
Slaw
- 1600 water
- 180 grams dried soba noodles, broken into halves
- 1 tsp olive oil
- 2 spring onions/shallots, trimmed and cut into pieces (approx. 30g)
- 1/4 cabbage, purple, cut into pieces (approx. 330g)
- 1/4 White cabbage, cut into pieces (approx. 430 grams)
- 2 carrots, cut into pieces (4cm) (approx. 200g)
Peanut dressing
- 1 garlic clove
- 1cm piece fresh ginger, peeled
- 100 grams Peanut Butter
- 60 grams rice wine vinegar
- 45 grams sesame oil
- 60 grams soy sauce
- 2 tbsp honey, liquid
Garnishes
- 80 grams roasted salted peanuts
- 3 sprigs fresh coriander, leaves only
- 1 tbsp sesame seeds
- 2 Limes, cut into wedges, to serve

- Preheat oven to 180°C. Grease a 24-hole mini muffin tray and set aside.
- Brush each wonton wrapper with olive oil, then place 1 wrapper into each muffin hole, oiled side facing up. Press wonton down into muffin hole to form a cup shape, then trim the excess around the edges using kitchen scissors so that your cups are neat.
- Sprinkle each cup with a little salt, then bake for 8 minutes (180°C), or until lightly browned and crisp. Remove wonton cups from muffin tray and set aside on a large serving platter to cool.
- Place water into mixing bowl and bring to the boil 12 min/100°C/speed 1, or until water is boiling.
- Insert simmering basket. Weigh soba noodles into simmering basket and cook 3-5 min/100°C/speed 1, or until noodles are cooked. Remove simmering basket with aid of spatula and rinse noodles under cold water to cease cooking.
- Allow noodles to drain, then transfer into a large bowl and drizzle with olive oil. Gently toss to ensure oil covers all of the noodles, then set noodles aside to cool completely. Rinse and dry mixing bowl.
- Place spring onions/shallots into mixing bowl and chop 3 sec/speed 7.
- Add purple cabbage and chop 6 sec/speed 4. Scrape down sides of mixing bowl with spatula, then chop 2-3 sec/speed 5, or until an evenly chopped consistency is achieved. Transfer into a serving bowl and set aside.
- Place white cabbage into mixing bowl and chop 6 sec/speed 4. Scrape down sides of mixing bowl with spatula, then chop 2-3 sec/speed 5, or until an evenly chopped consistency is achieved. Transfer into serving bowl with purple cabbage and set aside.
- Place carrot into mixing bowl and chop 3-5 sec/speed 5, or until an evenly chopped consistency is achieved. Transfer into serving bowl with cabbage and set aside.
- Place garlic and ginger into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add all remaining dressing ingredients and blend 10 sec/speed 9. Transfer into serving bowl with the slaw and combine well with spatula. Clean and dry mixing bowl.
- Place peanuts into mixing bowl and chop 1-3 sec/speed 6, or until a roughly chopped consistency is achieved.
- Add cooled soba noodles to slaw in serving bowl and gently combine with spatula.
- Carefully spoon slaw into each of the wonton cups, then top with chopped peanuts in mixing bowl, coriander leaves and sesame seeds. Serve immediately with lime wedges on the side.

Tip
All components of this recipe can easily be made well in advance. Dress and assemble salad, as per recipe, just before serving. Assemble your wonton cups just before serving so the cups remain nice and crisp.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
