Ingredients
Thai Chicken Mince
- 1 bunch corriander, Roughly chopped
- 1 stalk Lemon grass, Roughly chopped
- 1 Long Red Chili, Roughly chopped
- 20 grams olive oil, Optional
- 400 grams chicken breast, Cubed
- 1 lime, Juice only
- 50 grams coconut milk
- 2-3 cucumbers, Sliced

1. Place roughly chopped Corriander, Lemon grass, and Chilli in TM bowl and chop for 3sec/speed7. Scrape down sides of bowl and chop again 3sec/speed 7. Set aside. Do not rinse bowl.
2. Place cubed chicken in TM bowl set to "Closed lid" & press the Turbo button 3 times or until chicken is minced to desired texture. Scrape down sides of bowl.
3. Add oil and cook for 5mins/100/"Counter-clockwise operation" "Gentle stir setting"
4. Use the spatula to separate big chunks of mince then continue cooking 5mins/100/"Counter-clockwise operation" /"Gentle stir setting"
5. Add all remaining ingredients (except cucumbers) including chilli & herbs. Mix for 10 sec/speed 2
6. Spoon chicken mince onto sliced cucumber rounds. Mixture may be served hot or cold.

Tip
1. The chicken can be prepared and left in fridge until time to serve. They are actually better served cold.
2. If too spicy the chilli can be replaced with a mild sweet chili sauce 40g
