Ingredients

  • 1 Quantity of short crust pastry, From EDC p. 119
  • 160 g Cheddar cheese, roughly diced
  • 1 handful fresh parsley (washed)
  • 110 g Ham or bacon, roughly diced
  • 4 eggs
  • ground black pepper to taste
  • Half Brown onion, quartered

Recipe's preparation

  1. You will need to 2 non stick muffin trays for this recipe, lightly greased (I use Rice Bran Oil spray).

    Roll out pastry and cut into rounds and line muffin tray.

    Put cheddar cheese, parsley and onion in TM bowl and chop for 3 seconds/speed 8.

    Add the ham and 2 of the eggs and mix for 5 -10 seconds/speed 4.

    Add the remaining 2 eggs and mix on reverse / speed 1 - 2 for 10-20 seconds.

    Spoon into muffin trays and bake for 15-20 minutes at 180 degrees Celsius or until golden brown on top.

    Serve hot or cold. These taste best when served immediately.
