Sponge Kisses
- 3 eggs
- 120 grams castor sugar
- 60 grams plain flour or GF plain flour
- 30 grams gf corn flour
- 1 tsp cream of tartar
- 1/2 tsp Bi-carb soda

STEP 1.
Clean and Dry TM Bowl thoroughly. Separate Eggs.
STEP 2.
4-6MINS/SP 3.5.
Insert Butterfly. Add Egg Whites and half (30gms) Castor Sugar and whip until stiff and fluffy.
STEP 3.
2MINS/SP 3.
Remove Butterfly. Add Egg Yokes and the remainding Castor Sugar and mix well.
STEP 4.
2MINS/SP 3.
Add Plain Flour, Corn Flour, Cream of Tartar and Bi-Carb Soda and mix until well combined. DO NOT OVER MIX AT THIS POINT!
STEP 5.
Place a dessertspoon onto baking trays and baking in oven for 12mins or until lightly brown. Leave room as they do spread.
STEP 6.
Remove from oven and slide a butter knife under them and place on cooling rack. They are slightly crispy on top but still soft so take care.
STEP 7.
Place one sponge kiss on the bottom and smother with your favourite jam (Nan's homemade apricot) and whipped cream. Place another sponge kiss on top. Sprinkle with icing sugar.
N.B. THESE CAN BE FROZEN FULLY CONSTRUCTED AND THEN DEFROSTED - THEY ARE ACTUALLY SOFTER THIS WAY!

Pre-heat oven to 180deg and grease oven trays.

Found I could make without removing butterfly. Reduced time of whip at last stage til just mixed well.. Around 10 secs. Thank you for the lovely reminder of days gone by
So delicious. Reminds me of cooking with my nanna when i was young.
