Recipe's preparation

  1. Chop 250g plain flour and 250g ice cold cubed butter on speed 5 for 2 to 3 seconds.

    Add 110g iced water and juice of half a lemon and process on speed 4 until mix comes together, about 6 seconds.

    Place on Thermomat and bring together, using the sides of the mat. Add a little flour to the dough and base of mat and roll out into a small rectangle, 10 x 20cm.


    Fold top third down to middle and bottom third up to middle. Place bottom over top and wrap and refrigerate 15 minutes.

    Roll out on floured mat to 20 x 30cm and book fold again. Refrigerate 15 minutes. Repeat three more times. Last time, refrigerate at least 2 hours or overnight.

    Roll out finally to 2 mm thickness, relax frequently and cut to shape. Refrigerate shapes 20 minutes.

Tip

If making pastry in the hotter months, refrigerate longer. Add ice to water, making up to 110g.

    I love making this pastry. It's so easy. I knead ingredients for 2 minutes so he butter gets better distributed and there is less work for me. I did follow all the rolling then refrigerating the dough too. Best pastry by far. Big Smile

    Just used this pastry for the vegetarian sausage rolls and it worked out really well.  This was my first attempt at puff pastry.  tmrc_emoticons.)  My hubby thought it was great, better than the bought puff pastry, though there is a little bit more work!  Big Smile
