Ingredients

batter

  • 1 carrot roughly chopped
  • 1 zucchini roughly chopped
  • 320 grams wholemeal flour
  • 210 grams brown sugar
  • 1 teaspoon cinnamon ground
  • 1/2 teaspoon Bicarb. Soda
  • 2 eggs
  • 90 grams butter (TM), softened
  • 90 grams Milk (cold)
  • 65 grams Saltanas

Recipe's preparation

    makes 12 large muffins of 36 small muffins
  1. preheat oven to 200 degrees celcius ( 180 for fanforced) and lightly grease muffin tray. set aside

  2. please carrot and zucchini in mixing bowl and chop 5 sec / sp 10

  3. place all other ingredients excluding saltanas and mix 20 sec / sp 7

  4. add saltanas and mix 5 sec / Counter-clockwise operation"Counter-clockwise operation" / sp 7

  5. place mixture into greased muffin tray or patty pans

  6. bake for 25 - 30 min - or until spongy to touch

  7. let sit for 5 min then turn muffins out onto wire rack to cool completely, then store in air tight container.

Tip

these are great for kids who dont lke there vegitables as when finished you cant taste ther carrot or zucchini.

    I would make this again but significantly reduce the sugar in it. My son loved it but for me it was too sweet

    These were lovely thanks. I used a combination of flours and added a bit of baking powder, changed sultanas for chopped walnuts and decreased the sugar a little. I'll make them again.

    Absolutely delicious! I loved them and so did my eldest son. the younger son was onto me with the vegetables, so I think I might add some cocoa next time to try and hide them further.

    Great lunch box snack and super easy to make. Will definitely be making these many times more.
