Muffins
- 40 g raw almonds
- 20 g sunflower seeds
- 1/2 Pink lady apple, quartered
- 1/2 Ripe pear, quartered
- 130 g Homemade almond milk
- 100 "Light tasting" olive oil
- 60 g Pure Maple Syrup, (Or preferred liquid sweetner)
- 180 g Self Raising Flour
- 1/2 level teaspoon ground cinnamon

- Turn oven to 180'C
- Mill nuts and seeds in tmx 45sec Speed 9. Set aside.
- Add fruit and chop 5sec Speed 9
- Add milled seeds and nuts and all other ingreadients and mix 10sec Speed 5
- Divide evenly into 12-capacity muffin tray lined with paper cases, or use a dry silicon muffin tray
- Bake for 20mins, or until muffins spring back when gently pushed

- To make almond milk soak 1C almonds over night in water. In the morning drain and add almonds to tmx. Add 4C fresh water and blend 60s Speed 9. Drain through a seive to take out chunky bits if its not your thing.

I was really happy with the way these turned out..
I had to make a few changes just based on my ingredients. So I upped almonds to 60g (in place of sunflower seeds). I used coconut milk. 1 whole apple (instead of apple and pear). 80g melted vegan butter. And double cinnamon because i love cinnamon. Made a nice moist and fluffy muffin. Not too sweet which is great but I might consider more sweetener next time thanks for a great recipe!!
These were nice but they didn't rise as much as I hoped they would.

Oh wow, an everything free muffin that works and tastes good. I substituted the SR flour for GF SR flour (I use Coles brand, which I have found a good texture). And I substituted the pear for apple. And used coconut oil. This is the most exciting recipe in my everything free life right now, just saying
"I love it" - 6 year old
Would this work in a cake tin instead of muffins, or too dense? Need to make a vegan birthday cake that isn't chocolate, and is also avocado, banana and date free, so this might just be it!
Lovely, light and fluffy. Put a couple of finely sliced apple on the top and a tiny sprinkle of brown sugar. Very nice. Thanks

My daugher is gluten free, dairy free, refined sugar free and egg free at the moment so I used GF self raising flour and they turned out nicely. She loved them.
I can't answer whythey didn't rise, but maybe your muffin tins are bigger than mine. I hope you try this recipe again, and get 12 fluffy muffins
My muffins did not rise very well and I didn't have enough for 12. Only 10. Did I do something wrong?
My bub loved these! I used rice milk instead and left out the sunflower seeds as we didn't have it and they turned out great.
