Pudding:

  • 2/3C Raw unsalted pecans
  • 4-6 Dried Dates
  • water, (Filtered is best)
  • 4 tablespoon chia seeds
  • Maple syrup, (To taste)

Recipe's preparation

    Overnight Soak
  1. Combine nuts and dates in a bowl and cover with water. Place in refridgerator to soak o/night

  2. Assembly:
  3. 1. Drain water off nuts and dates

     

    2. Add to tmx with 1.5C water

     

    3. Blitz until smooth (about 30sec Speed 5)

     

    4. Return to bowl, add chia seeds and mix through

     

    5. Allow to rest for 20mins

     

    6. Serve with maple syrup

Tip

- you dont need much maple syrup, I find 1tsp is enough

 

- You could try with fresh berries, a berry sauce or agave

 

- Also a great alternative to yoghurt as a snack andfor lunchboxes

    Very nice, light breakfast. We left out the maple syrup and topped with frozen blueberries - delicious! Would be nice with banana or mango too. Thank you.
