Apple and sultana muffins
- 300 g self-raising flour
- 1/2 tsp ground cinnamon
- pinch salt
- 80 g brown sugar
- 2 apples, Core removed and cut into quarters. No need to peel
- 3/4 cup sultanas
- 110 g apple juice (100%)
- 80 g oil
- 60 g yoghurt
- 1 egg
- 3 tablespoons Milk
- dash vanilla extract
- cinnamon sugar, For sprinkling, optional
- icing sugar, For dusting, optional

- 1. Add the SR flour, salt and cinnamon to the bowl and blitz 10 secs/sp5.
2. Set aside in a large bowl, add the sugar and stir to combine. Make a well in the centre.
3. Place the apples in the "Closed lid" and chop 5secs/sp4 or until chopped to your liking. Set aside in another bowl with the sultanas.
4. Without rinsing the "Closed lid" , blend the apple juice, oil, egg, yogurt, milk and vanilla, 5secs/sp3
5. Pour the wet mixture into the flour mixture along with the apple and sultanas and blend with a spoon until the ingredients are just combined.
6. Spoon evenly into the paper cases and sprinkle with the cinnamon sugar (optional)
7. Bake for 25 mins or until golden and cooked when tested.
8. Remove from the muffin pans and cool on a wire rack. Dust with icing sugar to serve (optional)
