Aunty Lissie's Hedgehog
- 1 package Marie Biscuits (250gm)
- 20 grams Desiccated Coconut
- 125 grams Butter
- 125 grams caster sugar
- 25 grams cocoa powder
- 1 tsp vanilla/bean paste
- 1 egg (700gm), lightly beaten
- 250 grams icing sugar
- 10 grams cocoa powder
- 40 grams Butter, extra
- 35 grams Boiling water
- 100's and 100's sprinkles, to decorate

- Line a square tin with baking paper.
In your thermomix bowl place the biscuits and blitz for 4 seconds/speed 5.
Weigh in coconut, and set aside. Don’t bother to wash bowl.
Add butter, sugar and cocoa and melt for 2 min/70deg/sp 2. Scrape down and repeat if necessary. Colder butter may take longer to melt.
Add vanilla and reserved biscuits and coconut. Mix for 30 secs/rev/sp 1.5 while adding beaten egg through the hole in the lid. Increase speed to 2 for the last 10 seconds.
Press into prepared tin and ice with a simple chocolate icing. Wash and dry bowl
Add icing sugar, cocoa and butter to clean bowl. Pour boiling water in over butter and mix for 5 secs/sp 1 then increase to 10 secs/sp2 then 10 secs/sp 3. Scrape down sides and finish off with 10 secs/rev/sp 3.
Spread over slice then sprinkle with 100’s and 1000’s or something equally childlike and refrigerate for an hour before cutting into squares. It’s best served chilled.
Tip
Note: I generally use XL (700gm) eggs so if you use smaller you might need more than 1 egg. Add extra a bit at a time so mix doesn’t end up too sticky.

CVDK: Yep, strange as it sounds the eggs goes in raw and the slice does not get cooked.
Trust the process, as they say. Once it has set in the fridge and it is throughly mixed with all the other ingredients, it is a binding agent but you will not know its there. I have been making (and eating and sharing) this recipe for over 40 years...its OK.
I'm confused. So this doesn't get cooked? Egg is raw? I really would love to make but am a bit suss on the raw egg.

Made in next to no time. Didn't do the icing because we are not icing lovers in our household. We just pressed hundreds and thousands on the top. My teenage kids loved it. I'm not a fan of walnuts and I was especially looking for a recipe without them. I'm fairly new to TM's and your recipe was simple and suited our household's taste. Great for a beginner like me. Thank you.
