- 4 ripe bananas
- 10 medjool dates
- 2 eggs
- 1/2 teaspoon ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon cinnamon
- 1 teaspoon Vanilla Bean Paste
- 250 grams gluten free flour, quirky cooking cookbook
- 50 grams walnuts
- 1 teaspoon Bi-carb soda
- 1 pinch salt
- 40 grams honey

Preheat oven to 180 degrees and grease a loaf pan.
Add bananas, dates, eggs, ginger, ground cloves, cinnamon and vanilla to mixing bowl and mix for 20 seconds / speed 6.
Add flour, walnuts, bi-carb soda, salt and honey to mixing bowl and mix for a further 20 seconds / speed 6.
Pour into loaf tin.
Bake for 40 minutes at 180 degrees or until a skewer comes out clean.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. A beautiful, lusciously moist cake. Absolute must is to use Medjool dates, adding a little bit of desiccated coconut gives a lovely tropical undertone. I used agave rather than honey and a great substitute. Makes quite a large cake, I used a silicone loaf mould, so much leavening it rose quite a bit above the pan edible but yum, crunchy little crusty bits. After a few days you may get a layer of dark inside but is of no concern, it's just the bananas and dates, the cake will stay fresh for at least a week, awesome recipe thankyou.
My partner received a bunch of sugar bananas and they nearly all ripened at once so I looked in recipe community for a cake recipe. When I found this one I decided it would be nice to make a different banana cake with the dates and walnuts in it.
Glad I went for it because it was delicious. He really liked the other taste to it as well.
