Ingredients
Step 1
- 350 grams Pear, 3 pears
- 2 eggs
- 1 teaspoon Vanilla Bean Paste
- 10 medjool dates, pitted
- 1 teaspoon ground cinnamon
Step 2
- 250 grams gluten free flour
- 1 teaspoon Bi-carb soda
- 60 grams honey
- 60 grams pecans

Preheat oven to 180 degrees
Grease a 15cm x 15cm square cake tin
Add all the step 1 ingredients to the bowl and blend for 10 seconds / speed 6
Add ingredients from step 2 to the bowl and blend for 20 seconds / speed 6
Pour into cake tin and bake for 45 minutes or until a skewer comes out clean

I use the gluten free flour recipe from Quirky Cooking cookbook.

Lovely cake, moist when served warm. Great with no added sugar. I used sugar free maple syrup instead of honey. Could taste the pear base.
I like grain free so used almond meal. Also, a had small eggs so used three and then added about a tablespoon of coconut flour in case it was too moist!! Popped some frozen blueberries on top too!

I always have frozen fruits that don't get eaten quick enough so instead of going to waste I cut and freeze them. I used frozen pears. I did forget the cake in the oven so it got a bit dry but still good with a cuppa, I can see next time that I am more careful it will be moist.
This was delicious; thank you. Cake stayed moist for days. Did a separate batch of small loaves, which froze then defrosted well. Changes- maple syrup instead of the honey & I used kamut flour instead of gluten free.
I made this as i had lot's of pears to use up. I didn't have any nut's so i just left them out. It was super yummy thank you for sharing
Is the gluten-free flour plain or self-raising please? I don't have either in the cupboard, but can easily buy.
