Ingredients

The bottom layer

  • 170 grams medjool dates, 10 - 12 dates depending on size
  • 140g grams raw cashews
  • 1/2 teaspoon Vanilla Bean Paste
  • 1 pinch salt

The middle layer

  • 35 grams raw cashews
  • 1 pinch salt

The top layer

  • 60 grams coconut oil
  • 25 grams cacao powder
  • 45 grams honey

Recipe's preparation

    The bottom layer
  1. Place all the ingredients into mixing bowl and blend for 1 minute / speed 9

    Press mixture into loaf tin lined with baking paper.

  2. The middle layer
  3. Place all ingredients into mixing bowl and chop for 6 seconds / speed 5

    Press into bottom layer until there are no bits floating free.

     

  4. The top layer
  5. Place all ingredients into mixing bowl and mix for 15 seconds / speed 4

    Then melt for 2 minutes / 37 degrees / speed 1

    Spread over slice.

    Place in the fridge for a couple of hours to set.

    Slice into cubes

    Try not to eat it all in one sitting

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    I LOVE this and have made it probably 4 times in a couple of months!
    I put a little less honey in, but otherwise it is perfect.

    Very yummy!

    I didn't have any cocoa poweder left so instead of the top layer stated I used 100g of some chocolate coconut butter that I had in the cupboard and a dash of honey. Perfect amount of sweetness.

    Next time I'll rinse out the bowl between the base abd middle layer just to make it easier.

    Made this today and it was delicious. Great healthy way to have something indulgent. I can see myself doubling the recipe next time!
