Ingredients

Muffins

  • 3 ripe banana, peeled
  • 2 tablespoon honey
  • 110 g raw sugar
  • 100 g Milk
  • 70 g Butter
  • 260 g wholemeal self-raising flour
  • 1 teaspoon Bi Carb Soda
  • 1 teaspoon baking powder

Lemon Cream Cheese Frosting (optional)

  • 100 g cream cheese
  • 350 g icing sugar
  • 30 g Butter
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Recipe's preparation

    Muffins
  1. Blend banana, honey, sugar, milk and butter for 10 sec / speed 6 scrape down sides

  2. Add flour, bi-carb and baking powder and mix for 20 sec / speed 5

  3. spoon mixture into 24 lined muffin tins and bake on 180 degrees for 20 mins

    Cool on wire rack

     

  4. Optional: when cooled dollop lemon cream cheese frosting on top.

  5. Lemon Cream Cheese Frosting
  6. place all ingredients  in the bowl and blend for 20-30 sec / speed 7 or until desired consistanty achieved.

    Very light and delicious muffin. My mix only made 12 and cooked for 15 minute. Being consumed now at a great rate by the family. Thank you.
    I did halve the sugar and they didn't have time to get the icing on!

    Lovely light, delicious muffins! So quick and easy to whip up even last minute in the morning before school to stick in the lunch boxes. Or freeze them ahead of time to have on hand for lunch box snacks. The kids love these (as do we big kids tmrc_emoticons.;) ) I halve the sugar though and skip icing all together - they don't need it!

    I now make these every week.  I substitute the sugar with 2 TBS of Rice Malt Syrup. Kids can't tell the difference so now they're even healthier!  I also use wholemeal stoneground flour from www.naturesone.com.au It is so wholesome and light!  Thanks for a great recipe.

    I have made these twice...once with shredded coconut added and once with crushed walnuts added. Both were very yummy!

    The kids put home made Nutella on top instead of the lemon cream cheese frosting and they loved it.  Love
